E' una giornata speciale, un'occasione per riconnettermi con me stessa e con le mie passioni. Mi sono imbattuta su intero campo di orchidee Barlia robertiana. </span><span>Fiori di una bellezza esotica, che variano dal bianco cremoso al rosa intenso, fiori antichi e millenari. Il Gargano ha una grande varietà di orchidee, un tesoro inestimabile, protetto da leggi rigorose, dove </span><span>non è possibile né raccoglierle né danneggiarle. Il</span><span> nome stesso "orchidea" deriva dal greco "orchis", che significa "testicolo", per la forma del bulbo.</span><span> </span><span> </span><span>Vi racconto la leggenda dell'orchidee selvatiche. </span><span>Secondo gli antichi Greci, la prima orchidea nacque dalla metamorfosi di Ortis, figlio di una Ninfa e di un Satiro, punito dagli dei e dato in pasto alle belve. In seguito gli dei impietositesi trasformarono il suo corpo in questa splendida pianta. Le solite 10, massimo 12 verdure, sempre le stesse, allineate sugli scaffali tutte pulite e ordinate. Verdure trattate, concimate, tutte luminose e piene di colore rese quasi artificiali nel loro stesso splendore. Il nostro corpo, si sta abituando a mangiare sempre le stesse cose, si sta quasi disabituando a sapori più autentici, a quell' esplosione di gusto e vitalità che solo le verdure selvatiche possono regalare.</span></span></p><p style="text-align: justify;"><span style="font-size: medium;"><span><span style="font-family: courier;"><span style="background-color: white; white-space-collapse: preserve;">Personalmente mi ritengo fortunata vivo in un piccolo paese ai piedi del Gargano, e </span></span><span style="font-family: courier;"><span style="background-color: white; white-space-collapse: preserve;">nei mercatini, nei rioni, nei paesini vicini è ancora possibile trovare una varietà di erbe spontanee. La raccolta delle erbe selvatiche del Gargano è un'arte antica, tramandata di generazione in generazione. </span></span></span><span style="background-color: white; font-family: courier; white-space-collapse: preserve;">Conoscono bene quest'arte i contadini e i "terrazzani", contadini senza terra, dei paesi più poveri dell'entroterra garganico: Cagnano, Carpino, Lesina ecc. Ogni settimana, questi contadini caricano sui loro "Ape car" i tesori della terra e si recano nei paesi limitrofi per venderli. </span></span><span style="font-family: courier; font-size: medium;"><span style="background-color: white; white-space-collapse: preserve;">Ogni verdura ha il suo sapore unico, le sue proprietà benefiche e la sua storia da raccontare. Questa è la mia Puglia! <li><span><span style="color: #274e13; font-family: courier; font-size: medium;">sale. </span></span></li></ul></div><div><div></div><div style="text-align: justify;"><span style="color: #274e13; font-family: courier; font-size: medium;"><span>Fondere il burro e far intiepidire, aggiungete la farina, le uova, sale, il lievito sciolto nel latte tiepido e </span>continuate a lavorare fino a quando il composto sarà ben gonfio e si staccherà dalle pareti.</span></div><div style="text-align: justify;"><span style="color: #274e13; font-family: courier; font-size: medium;">Imburrate uno stampo alto ad anello del diametro di 24 cm e della capacità di 3 litri e poi spolverizzate di zucchero.</span></div>

<span style="color: #274e13; font-family: courier; font-size: medium;">Versate metà composto sul fondo dello stampo, livellate e disponete il formaggio ed il prosciutto tagliato a listarelle facendo in modo che non tocchino le pareti.</span></div>

<span style="color: #274e13; font-family: courier; font-size: medium;">Ricoprite con l'altra pasta scuotendo il recipiente sul tavolo per far uscire l'aria. mettete sopra della pellicola trasparente e fate lievitare per circa un'ora e mezza in luogo tiepido.</span></div>

<span style="color: #274e13; font-family: courier; font-size: medium;"><span>Una volta che avrà raddoppiato il suo volume, togliere la pellicola e mettete in forno caldo a 180°, dopo 20 minuti coprire con carta d'alluminio e proseguite la cottura per altri 20 minuti. </span>Controllate la cottura con uno stecchino. Togliete dal forno, fate riposare per 5-6 minuti e capovolgete su una gratella. Servitela tiepida.</span></div>

Pulite e lessate le patate,anche queste per una buona riuscita del piatto devono rimanere al dente. Una vota fredde, tagliate le patate a pezzettoni e versatele in una insalatiera assieme ai fagiolini. Condite con olio, aceto, sale, prezzemolo e menta e portare in frigo per un paio d'ore. Fatta con una semplice <a href="http://clementina-wwwdolcezzeinfinite.blogspot.it/2009/11/pasta-frolla-allolio-extravergine-di.html">frolla all'olio extravergine di oliva</a>, farcita con crema inglese, e decorata con frutta: fragole, banane, kiwi, ananas. Per ultimo ho lucidato la frutta con la gelatina per dolci. Per ottenere questa forma ho utilizzato due stampi: uno rettangolare e uno rotondo. Ho diviso la crostata rotonda in due parti uguali e ho avvicinato le parti ai lati della crostata rettangolare per ottenere la forma di farfalla. Facile no?</span></div>

Potete conservare la pasta briseè in frigo, chiusa in contenitore a chiusura ermetica, anche per un paio di giorni.</span></div>

<span style="color: purple; font-family: "georgia" , "times new roman" , serif; font-size: x-large;">Stendete con un mattarello una sfoglia sottilissima e mettete da parte solo un po' di impasto che servirà per decorare la torte con delle strisce di pasta.</span></div>

Farcitela con uno strato di Emmental, uno di prosciutto cotto e un' altro di Emmental. Battete e salate un uovo e versatelo sulla torta. Portate in forno caldo ventilato 180°C per 20 min.</span></div>

<li><span style="color: purple; font-family: "courier new" , "courier" , monospace; font-size: large;">350gr. di zucchero semolato o miele,</span></li>
<li><span style="color: purple; font-family: "courier new" , "courier" , monospace; font-size: large;">una spruzzata di succo di limone,</span></li>
<li><span style="color: purple; font-family: "courier new" , "courier" , monospace; font-size: large;">60 ml. di acqua.</span></li>

<span style="color: purple; font-family: "georgia" , "times new roman" , serif; font-size: large;">Mettete in una padella antiaderente le mandorle e fatele abbrustolire un pochino girando continuamente con un cucchiaio di legno; aggiungete lo zucchero e continuate a mescolare. Aggiungete 1/2 cucchiaio di acqua sempre girando. Quando lo zucchero inizia a imbrunirsi e le mandorle iniziano a scoppiettare trasferitele su della carta da forno raggruppatele a ciuffetti e distanziateli tra di loro. Farcite subito le ostie e schiacciateli con oggetti pesanti fino a che non si raffreddano.</span></div>
